Harvest: hand picked from September 20th (Cabernet Sauvignon); from September 25th (Sangiovese) and from September 9th (Merlot)
Fermentation temperature: 32° C
Period of maceration: 16 days (Cabernet Sauvignon); 20 days (Sangiovese) and 18 days (Merlot)
Aging: in stainless steel tanks and afterward in small French oak barrels for 16 months.
