Chef Lorenzo's recipe: Orange vanilla and cocoa semifreddo


Ingredients for 8 people

4 egg yolks

400 ml fresh whipped cream

40 g cocoa powder

150 g caster sugar

1 vanilla bean

125 g orange juice

150 g caster sugar

2 orange slices to garnish

edible flowers for garnish

butter to taste

50 g Grand Marnier

Method

1. Bring the orange juice to the boil with half a glass of water, add the sugar and the seeds of the vanilla bean.

2. Whip the egg yolks with an electric whisk in a bain-marie. Combine the sugar syrup and continue to assemble for 3 minutes. Decrease the speed and continue to whisk for another 5 minutes. Remove from heat and continue to whisk for another 5 minutes.

3, Add the whipped cream and liqueur. Grease the molds, pour the mixture and leave in the freezer for about 4 hours.

4. Turn the semifreddi on each plate 10 minutes before serving, decorate with orange slices, flower petals and cocoa powder.
