Grapes: Sangiovese and Cabernet Sauvignon grape pulp
Minimum alcohol: 45°
Distillation: entro le 48 ore dalla svinatura
System of distillation: Discontinuous in bain-marie
Processing: Grape pomace cooking of obout 4 hours with unpressed skins de-stalked by hand. Short spell in barrique previously used for the Castello di Fonterutoli wine.
Aging: 1 year in special containers, followed by 6/8 months in the bottle
Production: 2,500 bottles
Format: 50 cl bottle
